It all began with sharing knowledge. In China, I led cookery and pastry masterclasses. I shared the kitchen with Alain Passard and cooked for Charles Leclerc and Laurent Baffie. These encounters inspired a book, Les desserts de Romain Mariani (Éditions Clémentine).
Today, this journey shapes a cuisine guided by produce, precision and the embers. Crisp and melting textures play off one another; simplicity conceals technique.
Based in Beausoleil, I cook in your home, in Monaco and in private villas along the French Riviera.

Crispy textures first brought my cuisine to attention on social media. This taste for contrast guides my dishes, from the first bite to dessert.
Binchotan, a Japanese charcoal with an intense, steady heat, takes this exploration further: precise cooking, a delicate crust and a smoky note that complements the produce.
